In the heart of Florence, Tuscany, the Negroni was born—a timeless classic that has stood the test of time. Crafted in the early 20th century, its bold blend of gin, vermouth, and Campari was conceived by Count Camillo Negroni, who sought a stronger version of the Americano, also known as the Milano-Torino, another popular choice during aperitivo hours made with Vermouth, Campari and soda. Over the years, this iconic cocktail has become a symbol of Italian sophistication, celebrated worldwide for its perfect balance of bitterness and sweetness. But amidst tradition comes innovation, and the “Negroni Sbagliato” (“wrong Negroni”)—a happy accident where gin is swapped for Prosecco—adds a delightful twist to this iconic cocktail, offering a lighter and effervescent take on its rich legacy while still retaining the essence of its Tuscan roots. Another evolution of the cocktail is the “Negroni Bianco” (“white Negroni”), in which the red bitter and vermouth are both switched for their colorless white versions to get a lighter, more floral flavor. Furthermore, our bar proudly presents its own rendition of the Negroni Bianco in the Conte Negroni, made with all-around Tuscan ingredients: Gin distilled with only Tuscan juniper berries, Tuscan white vermouth and Tuscan white bitter. With its bold flavors and effervescence, the Negroni and its counterparts perfectly complement the array of flavors found in an aperitivo spread.

Bellini: A Symphony of Flavor

Bellini emerges as a timeless icon, steeped in history and artistic allure. Born in the vibrant ambiance of Harry’s Bar in Venice, its inception by Giuseppe Cipriani in the 1940s was a stroke of genius- a harmomious blend of white peach purée and Prosecco, created in homage to Venetian artist Giovanni Bellini. Symbolizing the artistry of simplicity, Bellini’s delicate pink hue and effervescent sparkle evoke the romance of Venetian sunsets and the spirit of la dolce vita. At our bar, we pay homage to this classic cocktail with a twist that’s perfect for the modern aperitivo enthusiast: our Bellini en Rose offers a contemporary interpretation with Rosè instead of Prosecco, to savor the essence of tradition and innovation.

What is a sagra  Each sagra is more or less extensive, but it must include a place to eat at communal tables and a space where the organizers prepare the food. Most also provide a ballroom dance floor, usually packed with older couples and kids. Some have an amusement park (so-called ‘giostre’) for the younger generations. It is challenging to generalize, though: each sagra has its peculiarity, which is why it is always a surprise. If you are looking for a local experience, then attending a sagra is undoubtedly one of them.

MORELLINO DI SCANSANO DOC 2015 – FATTORIA LE PUPILLE 20,90€

This is indigenous Tuscany with some Super Tuscan grapes thrown in. It’s made with 85% Sangiovese, 10% Syrah and 5% Cabernet Franc with aromas of red-skinned berry, leather and a hint of thyme. It’s been aged in second year oak and you’ll be lucky to get your hands on a bottle so seek it out. This is a wine that works at lunch or late at night in front of a fire.

VINO NOBILE DI MONTEPULCIANO DOCG RISERVA 2015 – GATTAVECCHI 19,50€

CHIANTI CLASSICO DOCG RISERVA 2018 – CASTELLO DI AMA 34,90€

A special treat for us we had to include it on our list. Delicious and elegantly structured, this opens with alluring aromas of fragrant blue flowers, black-skinned fruit, eucalyptus and notes of espresso. On the savoury, focused palate, bright acidity and lithe, fine-grained tannins accompany juicy black cherry, mocha, licorice and crushed mint.

Who doesn’t love Bolgheri, where the Super Tuscan story began. We are drinking this fabulous example of Italian winemaking at its finest. The blend of 60% Cabernet Sauvignon, 20% Cabernet Franc, 10% Merlot and 10% Sangiovese opens with aromas recalling blackberry, cedar and Mediterranean herb. The savoury, medium-bodied palate delivers ripe black cherry, mocha and black pepper notes with firm tannins which underpin the elegant structure.

BRUNELLO DI MONTALCINO 2016 – LE CHIUSE 65,00€

TENUTA SAN GUIDO 2018 SASSICAIA (BOLGHERI SASSICAIA) 249,00€

This one is famous for a reason. All about radiance and finesse, this iconic Tuscan red has beguiling aromas of cedar, wild red berry, menthol and pipe tobacco that mingle with fragrant blue flowers. Made with 85% Cabernet Sauvignon and 15% Cabernet Franc, the focused, finely structured palate is vibrant and savory, delivering cassis, orange zest, licorice and a hint of coffee held firm in taut, polished tannins. We’re saving this for exactly the right moment. Its either the first glass of red wine we drink at a special meal or I’m secretly keeping it for a private moment. We are really loving our Coravin at the moment for bottles like the Sassicaia we want to savour over the holiday.  If you haven’t got one it’s a perfect present for wine lovers.
